Salmon with Pesto Greens

Serves: 2 Time: 35mins Level: Easy

Ingredients

- 2 Salmon Fillets

- 1 Large Sweet potato (Pealed and chopped)

- 100g Tender stem Broccoli

- 250g Frozen Peas

- 100g Kale (Chopped)

- 1 Tsp Pesto

- 1 Clove Garlic (Diced)

- 1 Tsp Sweet Paprika

- 1 Tsp Salt

- 1 Tsp Pepper

- 2 Tsp Coconut Oil

Method

1. Preheat oven to 175 degrees Celsius.

2. Boil the sweet potato in a pot until soft.

3. Sprinkle half the paprika, salt and pepper on the salmon with the garlic. Wrap in foil and put in the oven for 15mins.

4. Place broccoli on a tray and add the rest of the seasoning and 1 tsp of oil. Place in the oven for 10-15mins.

5. Heat 1 tsp of coconut oil in a pan and cook the kale and peas for approx. 7mins. Add the pesto and reduce to a low heat.

6. Open the foil of the salmon and cook for another 5mins.

7. Drain potatoes and mash them.

8. Serve and enjoy.
