There are two kinds of people, Greeks, and everyone else who wish they were Greek- My Big Fat Greek Wedding.
I love Greek food!
Numerous studies suggest that the Mediterranean diet displays huge benefits especially as a protective effects against cardiovascular disease risk factors.
All these recipes (altered slightly) were taken from the fabulous cookbook- Greece-
Boiled Vegetable Salad
Serves 6
Ingredients
- 3 tbsp olive oil
- 2 courgettes sliced
- 2 peppers chopped
- 1 sweet potato thinly sliced
- 1 garlic clove chopped
- 1 tsp of thyme and rosemary
- 100g baby spinach to serve
Method
1. Place all ingredients into an oven dish. Mixed together and cook for 15-20mins.
2. Serve the roasted vegetables on a bed on spinach and enjoy.
Cracked Potatoes
Serves 6
Ingredients
- 15 small new potatoes
- 3 tbsp olive oil
- 1 tbsp coriander
Method
1. Preheat oven to 170 degrees
2. Power boil the potatoes for 20mins
3. Place the potatoes into an oven dish and cover with oil and coriander. Cook for 15mins.
4. Remove from oven and crush the potatoes. Cook for another 10mins
5. Serve and enjoy
Chicken Souvlaki
Serves 6
Ingredients
- 5 chicken breasts chopped
- 2 green peppers chopped
- ½ red onion chopped
- 1 tsp mixed herbs
- 1 tbsp olive oil
- 1 squeezed lemon juice
Method
1. Pre heat oven to 170 degrees
2. Marinate the chicken in the oil, lemon and herbs
3. Add the vegetables and chicken to skewers
4. Cook in the oven for 25mins
5. Serve and enjoy
Tzatziki Sauce
Ingredients
- 1 cup of plain yogurt
- ¼ cucumber finely chopped
- 2 garlic cloves crushed
- 1 tbsp olive oil
- Pinch of dill and salt
Method
1. Mix all the ingredients together.
