Coming home form a long day’s work and have to prepare dinner? This meal is quick, easy and nutritious!

Miso Cod with Spicy Rice

I believe that your gut health is so important for your overall health and well-being and miso has been linked to your digestive health as it can provide your gut with ‘good’ bacteria.


Time: 30mins Serves:2 Level: Easy

Ingredients

- 2 Cod Fillets

- 2 Tsp Miso Paste

- ½ Red Pepper (chopped)

- ½ Yellow Pepper (chopped)

- ¼ Courgette (chopped)

- 100g Sugar Snap Peas (chopped in half)

- ½ Tsp Green Chillies (diced)

- ½ Tsp Paprika

- ½ Tsp Tumeric

- ½ Tsp Cummin

- 1 Tsp Coconut Oil

- 1 Clove Garlic (diced)

- ½ Cup Chicken Stock

- 1 Bag of Microwavable Wholegrain Rice with Haricot Beans and Quinoa (Tesco)

Method

1. Preheat oven to 170 degrees Celsius

2. Spread the miso paste over the cod, cover with tinfoil and place in the oven for 25-30mins.

3. Heat the oil in a pan and add the garlic. Simmer until garlic starts to turn golden.

4. Add the prepared vegetables and spices and cook for approx. 7mins.

5. Add the stock and the bag of rice to the vegetables and simmer for 3mins or until the liquid has evaporated.

6. Remove cod from the oven and serve with the rice and vegetables. Enjoy.

Photographed: Cayenne pepper and mixed seeds were added to the cod.
