Chopped Inspired Salad

Ingredients
- 50g Spinach
- 50g Beetroot (freshly boiled or vacuum packed)
- 50g Courgette
- 20g Feta Cheese
- 4 Walnuts
- 50g Quinoa
- 2Tsp Mary Berry’s French herb dressing
Method
1. Rinse the quinoa in a sieve with cold water. Put the quinoa in a pot with double the amount of water (100ml) and bring to boiling point. Reduce to a simmer for 10 minutes, or until tender and the liquid is absorbed. Remove from heat and let it sit (fluff up) for a few mins.
2. Chop all of the vegetables, cheese and walnuts and put into a bowl with quinoa.
3. Add dressing, toss salad and serve!
