Beetroot Falafels

Time: 45mins Serves: 2-4 (makes 8) Level: Easy
Ingredients
- 1 ½ Boiled Beetroot or 2 Prepacked Beetroot (200g)
- 1 Tin (400g) Chickpeas
- ½ Tsp Cumin
- ½ Tsp Coriander
- ½ Tsp Chilli Pepper
- ½ Tsp Himalayan Salt
- 1 Tbsp Plain Flour
- 2 Tbsp Chia Seeds
Method
1. Preheat oven to 175 Degrees Celsius
2. Slice beetroot and roast in the oven for 15mins. Once dried out, remove and let cool.
3. Add the chickpeas, beetroot, spices and flour to a food processer and season with salt and pepper. Blitz until it becomes a smooth paste.
4. Make the paste into small balls and place on baking tray.
5. Sprinkle the balls with chia seeds and flatten slightly. Cook in the oven for 25mins.
6. Remove from oven and enjoy.
