Paul's Protein Pancakes

Time: 30mins Serves: 2 (makes 8 pancakes) Level: Easy
Ingredients
- 1 Banana
- 90g Porridge Oats
- 30g Vanilla Whey Protein (flavour optional)
- 3/4 Tsp Cinnamon
- Tbsp. Chai Seeds
- 3 Eggs
- 50ml Soya Milk
- 2 Tsp Coconut Milk ( ¼ tsp per pancake)
- 60g Blueberries
- Strawberries, Blueberry Greek yogurt and nut butter to serve
Method
1. Place the banana, oats, vanilla protein, cinnamon, chai seeds, eggs and soya milk into a blender and blend until the the ingredients become a thick consistency.
2. Heat coconut oil in a pan and pour in a small amount of pancake batter into the pan and add a handful of blueberries to the batter.
3. Cook for approximately 1-2 mins or until pancake starts to brown and flip onto the opposite side and cook for approx. 30-40sec.
4. Decorate, serve and enjoy!
